“So for Valentine’s Day at the Black Oystercatcher Restaurant, we decided on a rich and smooth amalgamation of tastes and textures: Grilled Purple Figs wrapped in Black Forest Ham, set on a Goats Cheese Ciabatta Toast with fresh Thyme, pairing with our new Black Oystercatcher Methode Cap Classique Brut,” says Nicole.

Method

lineWe were given amazing purple figs by a local farmer and there really isn’t much you need to add, as this fruit stands beautifully on its own. We served this dish as a starter in our three course Valentine’s menu and felt we had to share this recipe with you.

We cut across the figs to open them up, wrapped them in Black Forest Ham, drizzled them with a little butter and fresh thyme and popped them under the grill to caramelise just slightly.

We then spread smooth goats cheese (the honey one is really nice) on a slice of toasted Ciabatta, and placed the grilled figs on top. Yummy, yummy, yummy and a perfect pair with our newly released 2012 Methode Cap Classique Merlot Brut.
